Cheesy Fish Soup

Ingredients

  • 1/2 c. chopped onion
  • 1/4 c. flour
  • 1/8 tsp. pepper
  • 1 1/2 c. shredded American or Cheddar cheese
  • 2 Tbsp. margarine
  • 1/2 tsp. salt
  • 2 c. milk
  • 1 1/2 c. water
  • 2 chicken bouillon cubes
  • 1 lb. boneless cod fillets, cut into 1-inch cubes

    In large saucepan, cook onion in oleo until tender.

    Add flour, salt and pepper.

    Blend well.

    Add milk, stirring constantly until thick.

    Add cheese; stir until melted.

    Remove from heat.

    In medium saucepan, dissolve bouillon in water.

    Bring to a boil.

    Add fish and simmer until fish flakes easily.
