- 1 3/4 c. shredded cheese
- 3 Tbsp. all-purpose flour
- 1 c. chunky salsa
- 1 c. evaporated milk
- 1 c. diced yellow or zucchini squash
- 1 deep dish pie shell
- 4 eggs
Directions

1Preheat oven to 375°.

2In a small bowl, toss together 1 1/2 cups cheese, squash and flour.

3Place in pie shell.

4Spoon 1/2 cup salsa over top.

5In medium bowl, whisk eggs and evaporated milk. Pour into pie shell.

6Sprinkle with remaining cheese.

7Bake for 50 to 55 minutes.

8Cool 15 minutes before serving.
