- 9 ounces dry penne pasta
- 1 ounce butter
- 1 tablespoon plain flour
- 34 cup milk
- 1 12 cups sharp cheddar cheese, grated
- 14 cup frozen peas
- 1 small red pepper, finely diced
Directions

1Preheat oven to 350F

2Grease 6 x 3/4-cup capacity ovenproof ramekins.

3Cook pasta in a large saucepan of boiling salted water until just tender.

4Drain and return to saucepan.

5Melt butter in a small saucepan over high heat.

6Add flour and cook for 45 seconds.

7Remove from heat and slowly add milk, stirring constantly.

8Return to heat and cook, stirring, until sauce comes to the boil.

9Reduce heat and simmer for 3 minutes.

10Add 1 cup cheese and stir until well combined and melted.

11Stir sauce, peas and pepper through pasta.

12Spoon into ramekins.

13Sprinkle with remaining cheese.

14Bake for 15 to 20 minutes or until cheese is golden.
