  • 1/2 c. Ricotta cheese
  • 1/2 c. shredded Fontina or Mozzarella cheese
  • 1/4 c. (2 oz.) grated Parmesan or Romano cheese
  • 1/4 c. parsley flakes
  • 2 Tbsp. Italian bread crumbs
  • 1 Tbsp. melted margarine
  • 2 lb. boneless chicken breasts with skin
  • paprika

Directions

    Mix cheese, parsley and bread crumbs with melted margarine; set aside.

    Put 1/4 cup of cheese mixture in middle of breast; fold in half.

    Cover with 1/4 cup mixture (under skin).

    Sprinkle with paprika (on top of skin).
