- 1/2 c. Ricotta cheese
- 1/2 c. shredded Fontina or Mozzarella cheese
- 1/4 c. (2 oz.) grated Parmesan or Romano cheese
- 1/4 c. parsley flakes
- 2 Tbsp. Italian bread crumbs
- 1 Tbsp. melted margarine
- 2 lb. boneless chicken breasts with skin
- paprika
Directions

1Mix cheese, parsley and bread crumbs with melted margarine; set aside.

2Put 1/4 cup of cheese mixture in middle of breast; fold in half.

3Cover with 1/4 cup mixture (under skin).

4Sprinkle with paprika (on top of skin).
