Cheesy Vegetable Saute

  • 1 c. green pepper strips
  • 1 c. red onion, cut into rings
  • 1 garlic clove, minced or 1 tsp. garlic
  • 1/2 tsp. dried basil leaves
  • 3 to 4 Tbsp. margarine
  • 2 medium tomatoes, peeled and wedged
  • 3 oz. shredded Mozzarella cheese (3/4 c.)

Directions

    Melt margarine in large skillet.

    Saute peppers, onion, garlic and basil until crisp-tender.

    Stir in tomatoes.

    Place on ovenproof serving platter.

    Sprinkle cheese on top.

    Broil until cheese is melted.
