  • 1 pkg. frozen vegetables (California Blend is best)
  • Velveeta cheese slices
  • 3/4 stack Ritz or similar crackers, crushed
  • 1/2 stick oleo, melted

Directions

    Boil vegetables until just tender; drain well and put in shallow casserole dish (approximately 8 x 8-inch).

    Salt and pepper vegetables.

    Place slices of Velveeta cheese to cover top of all vegetables.

    Make crumb topping of oleo and crackers. Sprinkle over top.

    Bake at 350° until cheese melts, approximately 20 to 30 minutes.

    This can be made ahead of time and refrigerated until mealtime.
