- 1 (17 oz.) dark sweet cherries
- 1 (17 oz.) light sweet cherries
- 1/4 c. sugar
- 2 tsp. cornstarch
- 1 Tbsp. slivered orange peel
- 1/2 c. brandy or cognac
- 1 qt. vanilla ice cream
Directions

1Drain cherries; reserve syrup.

2Combine syrup with sugar and cornstarch in chafing dish or electric skillet.

3Bring to a boil. Cook, stirring, until smooth and clear.

4Add cherries and orange peel.

5Heat thoroughly.

6Pour all but 1 tablespoon brandy over cherries.

7Ignite the remaining 1 tablespoon brandy and pour over cherries.

8When flames begin to die down stir gently and ladle over servings of vanilla ice cream.
