Cherry Balsamic Compote

- 2 cups pitted sweet cherries
- 1/4 cup water
- 1/4 cup sugar
- 1 tbsp. balsamic vinegar
Directions

1Mix water and sugar together over medium heat until fully combined.

2Allow the syrup to simmer over medium heat until the sugar just begins to darken to a very light caramel color, about five minutes.

3Add the cherries and cook for two minutes.

4Add the balsamic vinegar and cook until the cherries have softened and the syrup has thickened.

5Remove the compote from the heat and allow to cool slightly before serving with vanilla ice cream.
