Cherry Chicken Ring

  • 1 (15 ounce) can cherries, drained, syrup reserved
  • 1 (6 ounce) package cherry gelatin
  • 2 cups boiling water
  • 1 cup cold water
  • 2 cups chicken, cooked, diced
  • 1 cup celery, diced
  • 1 12 cups mayonnaise
  • 14 cup low-fat sour cream
  • 2 tablespoons fresh lemon juice
  • 1 dash salt

Directions

    Dissolve gelatin in 2 cups of boiling water.

    Add enough cold water to the cherry syrup to make 1 cup, then add this syrup mixture to the gelatin mixture.

    Pour into an 8-inch ring mold & chill until set.

    In a bowl, combine mayonnaise, sour cream, lemon juice & salt, then add the cherries, chicken & celery, stirring to combine thoroughly.

    To serve, un-mold the gelatin & heap the chicken salad in the center of the ring of gelatin.
