Cherry Chocolate Slice

- 100 g baking chocolate
- 100 g butter
- 50 g flour
- 34 cup caster sugar
- 3 eggs
- 250 g pitted cherries
Directions

1Preheat oven to 180C.

2Melt chocolate and butter by placing both in a heatproof bowl and standing over a pan of boiling water.

3Stir until melted and well combined.

4(I actually use the microwave on low for this step.)

5Beat flour sugar and eggs until white and doubled in bulk, this will take about 5 minutes.

6Add melted chocolate and beat together well.

7Grease a lamington tin and scatter cherries over base of tin.

8Pour chocolate mixture over the top and bake in preheated oven for 30-35 minutes, or until a skewer comes out clean when tested.

9Remove from oven cool and cut into slices.
