- 9 tablespoons (1 stick plus 1 tablespoon) unsalted butter
- 3 eggs
- 3/4 cup sugar
- 3/4 cup all purpose flour, sifted
- 1/2 teaspoon vanilla extract
- 1 pound Bing or Queen Anne cherries, stemmed and pitted
- 2 cups heavy cream, lightly whipped
Directions

1Preheat the oven to 350F.

2Coat a 10-inch round glass or porcelain pie pan evenly with 1 tablespoon of the butter.

3Melt the remaining 8 tablespoons butter in a small saucepan over low heat and reserve.

4Using an electric mixer set at high speed, beat the eggs with the sugar and reserved melted butter until the mixture is thickened and a light lemon color, about 3 minutes.

5Add the flour and vanilla and mix until thoroughly blended.

6Set aside for 15 minutes.

7Arrange the cherries over the bottom of the buttered pie pan.

8Pour the batter evenly over the cherries.

9Bake for 45 minutes until golden and puffy.

10Serve at room temperature with the whipped cream.
