Cherry Parfait Crunch

Ingredients

  • 34 lb dark sweet cherry
  • 12 cup apple juice, unsweetened
  • 14 teaspoon ground cinnamon
  • 1 dash ground nutmeg
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 13 cup cereal, natural wheat & barley nuggets, not flakes
  • 2 tablespoons toasted almonds, chopped
  • 2 cups non-fat vanilla yogurt

Directions

    Remove stems & pits from cherries, then cut into halves (about 2 1/4 cups).

    In a small saucepan combine cherries, apple juice, cinnamon & nutmeg, cooking & stirring over medium heat for 5 minutes or until cherries begin to soften.

    In a small container combine cornstarch & water, stirring until smooth, then stir this mixture into the hot cherry mixture.

    Turn heat up to high & continue cooking & stirring until mixture boils & thickens slightly.

    Remove from heat, let cool for 10 minutes, then cover & refrigerate until chilled.

    After cherry mixture has chilled, in a small cup combine.cereal & almonds.

    In 4 10-ounce wine or parfait glasses, equally divide & layer half the cherry mixture, then half the yogurt & half the cereal mixture.

    Repeat the layers & serve!
