- 3 eggs
- 1 1/2 cups milk
- 1 1/2 cups flour (all-purpose or white whole wheat)
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 2/3 cup pitted cherries
Directions

1Preheat oven to 450°F.

2Combine milk, flour, salt, and butter.

3Beat until just smooth.

4Beat in eggs one at a time.

5Stir in cherries.

6Let batter rest at room temperature for 15 minutes.

7Meanwhile, generously butter or grease 12 muffin cups.

8Place in oven to preheat.

9When batter has rested, carefully remove pans from oven.

10Fill each cup about 3/4 full.

11Bake for 20 minutes.

12Reduce heat to 350° and bake for 10-15 minutes longer, or until puffed and golden brown.

13Remove pans from oven.

14Carefully pierce a hole in the top of each popover to let steam escape.

15Cook 5 minutes before serving.
