Ingredients

  • 1 cup ricotta cheese
  • 1/4 cup honey
  • 1 None orange, peel grated
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 4 sheets phyllo dough
  • 4 tbsp (1/2 stick) butter, melted (or no stick cooking spray)
  • 1 can (15 oz) cherries, drained
  • 1 tbsp slivered almonds
  • None None Ice cream, to serve

Directions

    Preheat the oven to 400°F. Grease a baking pan. Mix ricotta, honey, orange peel and spices in a medium bowl.

    Place 2 sheets phyllo on work surface. Brush with butter or spray with no stick cooking spray. Top with remaining phyllo, 2 sheets at a time, brushing with butter every 2 sheets.

    Spoon ricotta mixture along long edge of phyllo stack. Top with cherries. Roll up, folding ends in. Place seam-side down on prepared pan. Brush with butter. Sprinkle with almonds.

    Bake for 25-30 mins, until golden. Serve with ice cream.
