  • 1 box Mochiko (1 lb.)
  • 2 c. sugar
  • 1 tsp. baking powder
  • 1 (12 oz.) can coconut milk
  • 1 1/2 to 1 3/4 c. milk
  • 1 tsp. vanilla
  • few drops food coloring

Directions

    Mix all ingredients together.

    Pour into greased 9 x 13-inch pan.

    Cover with foil.

    Bake on the middle shelf at 350° for 1 hour.

    Cool and cut into 3/4 x 2-inch pieces.

    Roll into potato starch or kinako.
