Chicken Alberghetti

Ingredients

  • 4 chicken breasts (whole or bite size pieces)
  • 1 egg
  • 1/2 c. milk
  • 6 oz. sliced Swiss cheese
  • 6 oz. sliced Mozzarella cheese
  • salt and pepper
  • oil (for sauteing)
  • 1 (15 oz.) jar marinara sauce or spaghetti sauce (I double this)
  • butter
  • Italian flavored bread crumbs (Progresso)
  • Parmesan cheese

Directions

    Dip chicken breasts in egg-milk mixture, then in mixture of bread crumbs, Parmesan, salt and pepper.

    Saute quickly in olive or vegetable oil until golden.

    Pour half of marinara sauce in baking dish.

    Arrange chicken breasts.

    Cover with cheese slices and other half of marinara sauce.

    Sprinkle Parmesan cheese on top; dot with butter.

    Bake at 350° for 30 to 45 minutes, until bubbly throughout. (325° if using a glass dish).
