Chicken Almond Rice

Ingredients
- 6 chicken breasts, skinned
- 3 oz. can sliced mushrooms
- salt and pepper
- paprika
- juice of 1/2 lemon
- 1 stick butter or margarine
- pinch of basil and rosemary
- 1/2 c. slivered almonds
- 1/2 c. chopped onions
- 1/4 c. sherry
- 1 c. uncooked rice
Directions

1Place chicken in baking dish and sprinkle with salt, pepper and paprika.

2Brown almonds in margarine and remove from pan after browning.

3Add onions and mushrooms to remaining margarine and saute.

4When slightly browned, add herbs, lemon juice and sherry. Return almonds to onion mixture and stir together.

5Spoon over chicken.

6Cover with foil and bake 1 hour at 350°.

7Cook rice according to package directions.

8Lift cooked chicken out of sauce.

9Gently stir cooked rice into sauce to serve.

10Spoon rice mixture on platter.

11Place chicken on top of rice and garnish with parsley.

12Serves 6.
