  • 1 chicken, skinned and cut-up
  • 1/4 c. white wine or water
  • 1 c. canned, pitted apricots, drained
  • 1/4 c. diced, dried apricots
  • 1/2 c. whole dried cranberries or cherries
  • 1/2 c. coarsely chopped onion
  • 1/2 c. apricot preserves
  • 2 Tbsp. lemon juice
  • 1/2 tsp. cinnamon
  • 1 tsp. lite salt (optional)
  • chopped or whole parsley for garnish

Directions

    In large nonstick skillet, combine chicken, onion and wine or water; mix in apricot preserves, cover and cook over medium-low heat for 20 to 25 minutes, stirring occasionally.

    Add the remaining ingredients and cook for 5 minutes, stirring occasionally, or until chicken is done.

    Garnish and serve.
