- 1 (3 1/2 to 4 lb.) broiler-fryer
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. margarine, melted
- 1 1/2 c. water
- 1 c. uncooked regular rice
- 1 (10 3/4 oz.) can cream of mushroom soup (undiluted)
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
Directions

1Remove giblets.

2Rinse chicken with cold water; pat dry. Sprinkle cavity and skin with salt and pepper; truss chicken. Place in a 13 x 9 x 2-inch baking pan.

3Pour melted butter over chicken.

4Bake uncovered at 350° for 45 minutes.

5Remove from oven. Combine remaining ingredients; spoon around chicken.

6Cover with foil and bake an additional 30 minutes.

7Uncover and bake 15 minutes.
