- 3 c. Minute rice
- 1 1/2 c. green pepper
- 3/4 c. chopped onion
- 3 Tbsp. cooking oil
- 1/4 c. cornstarch
- 2 c. chicken broth
- 3 Tbsp. soy sauce
- 2 c. shredded, cooked chicken
- 1 can tomatoes, cut in wedges
- 1 small can mushrooms
Directions

1Cook chicken breasts; bring to a boil.

2Remove chicken from bone.

3Prepare the rice.

4Cook green pepper and onion in oil in a skillet over low heat until tender, but not brown.

5Blend cornstarch with small amount of chicken broth.

6Add remaining broth and soy sauce and gently stir chicken and vegetables in together.

7Stir until sauce is clear and thickened.

8Add tomatoes and mushrooms and serve over rice.
