  • flour for dredging
  • 6 chicken breasts, boned, skinned and chopped
  • 10 oz. pkg. chopped spinach, cooked and drained
  • 1 Tbsp. butter
  • 1 Tbsp. finely chopped onion
  • 6 slices cooked bacon, finely chopped
  • 6 large mushrooms, finely chopped
  • small amount of garlic
  • 2 Tbsp. melted butter
  • 2 Tbsp. tomato puree

Directions

    Preheat oven to 450°.

    Melt 1 tablespoon butter in skillet. Add onion and saute lightly, then add mushrooms.

    Saute until liquid evaporates.

    Stir in cooked spinach.

    Add garlic, bacon and tomato puree.

    Cool.
