Chicken Basque Recipe

Ingredients

  • 1 1/2 pound Italian sausage, cut into 2-inch pcs
  • 2 (3 1/2 lb.) chickens, cut into pcs
  • 6 tbsp. butter
  • 1 lg. onion, minced
  • 1 (16 ounce.) can tomato sauce
  • 2 cloves garlic, chopped
  • 1/2 c. black pitted olives, sliced
  • 1/2 c. stuffed green olives, sliced
  • 1 c. white wine or possibly water
  • 1 c. slivered almonds
  • Salt and pepper to taste

Directions

    Heat half the butter in a large heavy pot.

    Quickly brown the chicken pcs in it on both sides.

    When brown, remove pcs and set aside.

    Add in the remaining butter to pan and saute/fry the onions till they are golden brown.

    Pour in the tomato sauce and wine, add in the garlic.

    Place chicken back into pan.

    Add in sausage and simmer 30 min.

    Add in the sliced olives, salt and pepper.

    Simmer 5 min.

    Sprinkle with the almonds and serve warm.
