Chicken Breasts Romano

Ingredients

  • 1/3 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 whole chicken breasts, split and skinned
  • 2 Tbsp. oil
  • 1/4 c. minced onions
  • 2 c. tomato juice
  • 2 Tbsp. Romano or Parmesan cheese, grated
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. basil leaves
  • 1/2 tsp. vinegar
  • 1 (4 oz.) can mushrooms, drained
  • 1 Tbsp. parsley
  • 1/2 c. Romano or Parmesan cheese, grated
  • hot spaghetti
  • parsley

Directions

    Combine first three ingredients.

    Dredge chicken, brown in oil and drain on paper towel.

    Pour off all but one tablespoon of pan drippings.

    Saute onions in reserved drippings until tender.

    Add next eight ingredients, stirring.

    Return chicken.

    Cover and simmer 45 minutes.

    At serving time, sprinkle chicken with the cheese.

    Serve over spaghetti and garnish with parsley.
