Chicken Breasts With Grapes

- 3 whole chicken breasts
- 1 c. cracker crumbs
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1/4 tsp. dried tarragon
- 7 Tbsp. butter
- 1/4 c. finely chopped onion
- 1/2 c. chicken stock
- 1/2 c. dry white wine
- 1/2 lb. mushrooms, sliced
- 2 c. seedless green grapes
Directions

1Preheat oven to 375°.

2Remove skin from breasts and halve then coat the pieces with the crumbs mixed with salt, pepper and tarragon.

3Brown the chicken on all sides in 4 tablespoons of the butter in a skillet.

4Place the pieces in a single layer in a shallow baking pan.

5Add the onion to the butter left in the skillet and cook until tender.

6Pour in the stock and wine and bring to a boil.

7Pour around the chicken.

8Bake, uncovered, for 30 minutes.

9Saute the mushrooms in the remaining butter and add along with the grapes to the chicken.

10Bake for 8 to 10 minutes longer.
