- 1 Tbsp. vegetable oil
- 1 lb. chicken thighs or breasts
- 1 small onion, cut into 1-inch sq.
- 1 medium green or sweet red pepper, cut into 1-inch sq.
- 1 can cream of broccoli soup
- 3 Tbsp. water
- 1 Tbsp. soy sauce
Directions

1Cook chicken in skillet until browned.

2Add onions and pepper; cook 5 minutes or until vegetables are tender-crisp.

3Stir in soup, water and soy sauce, heat to boiling, reduce heat to low.

4Cover and simmer 5 minutes or until vegetables are tender.

5Serve over rice.
