Chicken-Brown Rice Bake

- 1/2 c. chopped onion
- 2 Tbsp. vegetable oil
- 2 tsp. curry powder
- 3 c. chicken broth
- 1 c. brown rice, uncooked
- 1 (16 oz.) pkg. frozen mixed vegetables
- 2 c. chopped cooked chicken
Directions

1Saute onion in oil until crisp-tender.

2Add curry powder and cook 1 minute, stirring constantly.

3Add chicken broth; bring mixture to a boil.

4Cover, reduce heat and simmer 15 minutes. Stir in rice.

5Cover and cook over low heat 50 minutes or until liquid is absorbed.

6Stir in vegetables and chicken.

7Spoon into a lightly greased 12 x 8 x 2-inch baking dish.

8Cover and bake at 350° for 30 to 35 minutes.
