  • 2 lb. skinned and boned chicken breasts
  • 2 Tbsp. chopped onion
  • 1 1/2 c. fine fresh bread crumbs
  • 1/2 c. heavy cream or milk
  • 3 Tbsp. vegetable oil
  • 5 Tbsp. butter
  • 2 Tbsp. chopped parsley

Directions

    Finely grind chicken breasts in food processor.

    Stir in 1 cup bread crumbs, cream, parsley, onions, salt and pepper.

    Blend well.

    Shape into patties.

    Refrigerate 1 hour.

    Dredge in bread crumbs.

    Heat oil and butter in skillet and cook burgers until done.
