- 1 large green pepper, cut into 1/2-inch wide strips
- 1 clove garlic, minced
- 1 broiler-fryer chicken, cut up (3 to 3 1/2 lb.)
- 1 tsp. dried basil, crumbled
- 2 Tbsp. olive oil
- 2 (16 oz.) jars Italian cooking sauce
- 1/2 tsp. salt
- 1/8 tsp. ground black pepper
Directions

1Saute green peppers and garlic in oil in a large skillet over medium heat for 3 minutes.

2Remove pepper and garlic to plate. Add chicken to skillet; cook until brown on all sides, about 8 minutes.

3Drain and discard fat.

4Add cooking sauce, basil, salt and ground pepper to skillet; stir in green peppers and garlic. Heat to boiling; reduce heat.

5Simmer, covered, until chicken is tender 45 to 50 minutes.
