- 4 large chicken breasts
- 1/4 c. oil
- 2 medium onions, cut in 1/4-inch slices
- 2 cloves garlic, crushed or 1/2 tsp. instant minced garlic
- 1 large can tomatoes
- 1 (8 oz.) can tomato sauce
- 1 tsp. salt
- 1 tsp. oregano
- 1/4 tsp. pepper
- 1/2 tsp. celery seed or flakes
- 1 or 2 bay leaves
Directions

1Cook chicken breasts.

2Remove bones and cut up; set aside. In oil, cook onions (cut in 1/4-inch slices) and garlic.

3Cook until tender but not brown.

4Stir in chicken.

5Combine tomatoes, tomato sauce, salt, oregano, pepper, celery seed or flakes and bay leaves.

6Pour mixture over chicken.

7Cover and simmer for 30 minutes.

8Cook uncovered 15 minutes longer.

9Stir occasionally. Remove bay leaves.

10Skim off excess fat.

11Serve over noodles or spaghetti.
