  • 8 chicken breasts
  • 1/2 c. sweet vermouth
  • 3 bay leaves
  • 1 tsp. dried whole thyme
  • 1 tsp. dried whole oregano
  • 1 large onion
  • 1/2 tsp. each pepper and salt
  • 3 to 4 garlic cloves
  • 2 medium green peppers, sliced
  • 1 (4 oz.) jar pimento
  • 2 (16 oz.) cans tomatoes, sliced (undrained)
  • 8 oz. pkg. fresh mushrooms

Directions

    Saut boned chicken breasts in 1 tablespoon oil. Stir in all the rest of the ingredients (except green peppers). Simmer about 20 to 30 minutes; add peppers and cook about 10 minutes more. Thicken with flour and water, if needed.
