Ingredients
- 2 1/2 lb. frying chicken
- 1/4 c. oil
- 1/2 c. unsifted flour
- 2 c. thinly sliced onion rings
- 1/2 c. chopped green pepper
- 2 cloves garlic, crushed
- 1 lb. can tomatoes, drained
- 8 oz. can tomato sauce
- 1 c. sliced fresh mushrooms or 1 can sliced mushrooms
- 1 tsp. salt
- 1/4 tsp. oregano
- 1/8 tsp. basil
- rice or spaghetti (I usually use noodles)
Directions

1Wash chicken.

2Pat dry.

3Add oil to large skillet.

4Coat chicken with flour.

5Brown quickly.

6Cover.

7Cook over medium heat about 15 minutes until tender.

8Remove chicken.

9Add onion slices, green pepper and garlic to skillet.

10Cook until tender. Stir in remaining ingredients.

11Remove chicken from bones in large pieces.

12Add chicken to sauce.

13Cover tightly.

14Simmer for 25 to 30 minutes.

15Serve with rice or spaghetti prepared according to package directions.
