  • 1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
  • 2-1/2 lb. (1.1 kg) bone-in skinless chicken thighs
  • 1/2 tsp. black pepper, divided
  • 1 cup sliced fresh mushrooms
  • 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 1 green pepper, chopped
  • 1 clove garlic, minced
  • 1 can (28 fl oz/596 mL) diced tomatoes, undrained King Sooper's 1 lb For $0.99 thru 02/09
  • 3 Tbsp. Minit Tapioca
  • 1/2 tsp. dried thyme leaves, crushed
  • 1 bay leaf

    Heat dressing in large skillet on medium heat.

    Add chicken; sprinkle with 1/4 tsp.

    black pepper.

    Cook 2 to 3 min.

    on each side or until evenly browned on both sides.

    Remove chicken from skillet, reserving drippings in skillet; cover chicken to keep warm.

    Add mushrooms, onions, green peppers and garlic to skillet; cook and stir 5 min.

    or until onions are crisp-tender.

    Stir in tomatoes, tapioca, thyme, bay leaf and remaining black pepper.
