  • 2 tsp. olive oil or vegetable oil
  • 1 onion, quartered
  • 3 cloves garlic, minced
  • 1/2 c. green pepper, sliced in strips
  • 1 Tbsp. flour
  • 1/2 c. canned tomatoes
  • 1/2 c. chicken broth
  • 1/2 c. dry white wine
  • 1 lb. chicken (boneless), skinned
  • 1 c. mushrooms, quartered
  • 2 tsp. parsley, chopped
  • 1/4 tsp. salt
  • 1/2 tsp. black pepper

    Heat oil in a skillet.

    Saute onion, garlic and green pepper until softened.

    Stir in flour, tomatoes, chicken broth and wine until thickened.

    Cut chicken into bite size pieces and add to onions along with mushrooms, parsley, salt and pepper.

    Cover and simmer 20 to 25 minutes.
