- 2 tsp. olive oil or vegetable oil
- 1 onion, quartered
- 3 cloves garlic, minced
- 1/2 c. green pepper, sliced in strips
- 1 Tbsp. flour
- 1/2 c. canned tomatoes
- 1/2 c. chicken broth
- 1/2 c. dry white wine
- 1 lb. chicken (boneless), skinned
- 1 c. mushrooms, quartered
- 2 tsp. parsley, chopped
- 1/4 tsp. salt
- 1/2 tsp. black pepper
Directions

1Heat oil in a skillet.

2Saute onion, garlic and green pepper until softened.

3Stir in flour, tomatoes, chicken broth and wine until thickened.

4Cut chicken into bite size pieces and add to onions along with mushrooms, parsley, salt and pepper.

5Cover and simmer 20 to 25 minutes.

6Makes 2 servings.
