- olive oil
- 1 long, hot pepper, cut into rings
- 1 onion, sliced in wedges
- 1 1/2 lb. chicken breasts, cut into chunks
- 4 to 5 bell peppers, cut into chunks
- 1/2 jar marinara sauce
- 1/4 c. red wine
- 8 mushrooms, sliced
- salt and pepper
- paprika
Directions

1Heat a large frying pan.

2Turn heat down to medium-high.

3Add generous amount of olive oil.

4When pan cools, add hot pepper rings and half of onion wedges.

5Fry 1 to 2 minutes.

6Add chicken chunks.

7Fry until chicken is browned and almost cooked through. Sprinkle with salt, pepper and paprika.

8Add bell pepper chunks. Stir to incorporate.

9Let peppers cook 2 to 3 minutes.

10Add marinara sauce.

11Add wine.

12Bring to a boil.

13Turn heat down to simmer.

14Add mushrooms and other half of onion.

15Let simmer 5 to 10 minutes.

16Serve with crusty bread.
