Chicken Cacciatore

Ingredients

  • 1 (2 1/2 to 3 lb.) fryer
  • 2 Tbsp. cooking oil
  • 2 medium onions, sliced
  • 2 cloves garlic, minced
  • 1 (16 oz.) can tomatoes, cut up
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. oregano
  • 1/2 tsp. celery seed
  • 1 tsp. salt
  • 1 or 2 bay leaves
  • 1/4 tsp. pepper
  • 1/4 c. dry white wine

    In skillet, brown chicken in oil.

    Remove the chicken.

    In same skillet, cook the onions and garlic until tender.

    Return chicken to skillet.

    Combine undrained tomatoes and rest of ingredients.

    Pour over chicken.

    Cover and simmer for 30 minutes. Stir in wine and cook, uncovered, for 15 minutes.

    Turn often. Remove bay leaves before serving.
