- 4 lb. broiler, cut into pieces
- 3 Tbsp. olive oil
- 1 tsp. chopped parsley
- 1 garlic clove, chopped
- salt
- dash of pepper
- 3/4 c. dry white wine
- water
Directions

1Place olive oil in pot.

2Add garlic.

3When garlic is golden, add parsley.

4Add chicken and brown on all sides over moderate flame.

5When chicken is well-browned, add wine, pepper and salt. Cook until wine is almost evaporated.

6Add water and simmer about 45 minutes until chicken is done.
