  • 1 lb. boned chicken breasts, pounded to uniform thickness
  • flour
  • 5 Tbsp. butter
  • 2 cloves garlic, minced
  • 5 scallions, sliced thin (including part of green)
  • 1 Tbsp. lime juice
  • 1 tsp. lime zest
  • bread crumbs
  • 1/2 c. white wine

    Dredge chicken in flour, shaking off excess.

    In large skillet, heat butter.

    Saute chicken breasts 3 minutes per side.
