- 1 lb. chicken breasts, cut in strips
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 3 Tbsp. vegetable oil
- 1/2 lb. sliced mushrooms
- 1/2 c. chopped green onions
- 1 green pepper, cut in strips
- 1 c. cashews
- 1/2 c. water
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 1 Tbsp. sugar
- dash of paprika
- cooked rice
Directions

1Blend 1 tablespoon cornstarch and 1 tablespoon soy sauce; toss chicken and allow to marinate for 20 minutes.

2In a large skillet, combine oil and garlic; add chicken.

3Cook and stir several minutes.

4Add vegetables and cashews; stir-fry until tender. Combine cornstarch, soy sauce, sugar, water and paprika.

5Add to chicken mix and cook until thickened.

6Serve over cooked rice.
