- 1 lb. small fresh carrots
- 1/2 tsp. salt
- 1 tsp. sugar
- 1/4 c. maple syrup
- 1/4 c. butter or margarine
- 1 tsp. dry mustard
- 1/8 tsp. white pepper
Directions

1Place peeled carrots in a saucepan with about an inch of water plus salt and sugar.

2Cover and cook 10 minutes, or until crisp-tender.

3Remove carrots from the pan and keep warm.

4Cook carrot water until it is reduced to about 1/2 cup.

5Add syrup, butter and mustard.

6Cook until a heavy syrup is formed, about 7 minutes.

7Add carrots and pepper.

8Serves 6.
