Chicken Casserole

Ingredients

  • 1 large chicken or 5 breast halves, cooked and boned
  • 1 can French-cut green beans
  • 1 box Uncle Ben's curried rice or 1 box long grain wild rice
  • 1/2 c. raisins
  • 1 (8 oz.) can water chestnuts, sliced
  • 1 small onion, chopped
  • 1 jar pimentos
  • 1 can cream of celery soup
  • 1 c. mayonnaise
  • 1 tsp. curry powder
  • salt to taste

Directions

    Cook rice in 2 1/2 cups chicken broth for 20 minutes.

    Add onion and cook 5 minutes.

    Mix all ingredients together and pour into large casserole dish.

    Cover top with 1 stack of Ritz crackers mixed with 1 tablespoon melted butter.

    Bake 40 minutes at 350°.
