- 1 large chicken or 5 breast halves, cooked and boned
- 1 can French-cut green beans
- 1 box Uncle Ben's curried rice or 1 box long grain wild rice
- 1/2 c. raisins
- 1 (8 oz.) can water chestnuts, sliced
- 1 small onion, chopped
- 1 jar pimentos
- 1 can cream of celery soup
- 1 c. mayonnaise
- 1 tsp. curry powder
- salt to taste
Directions

1Cook rice in 2 1/2 cups chicken broth for 20 minutes.

2Add onion and cook 5 minutes.

3Mix all ingredients together and pour into large casserole dish.

4Cover top with 1 stack of Ritz crackers mixed with 1 tablespoon melted butter.

5Bake 40 minutes at 350°.
