Chicken Casserole

Ingredients

  • 6 whole boneless chicken breasts
  • 2 pkg. frozen broccoli, cooked a few minutes or 2 cans asparagus
  • 1 medium onion, sliced
  • 1 medium can mushrooms
  • 1/2 c. butter or margarine
  • 2 cans cream of mushroom or chicken soup
  • 3/4 c. milk
  • 1/4 to 1/2 lb. sharp Cheddar cheese, grated
  • 1/4 tsp. Tabasco sauce
  • 2 tsp. soy sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper

    Saute onion and mushrooms in butter.

    Cut chicken breasts in half; saute with the preceding.

    Add remaining ingredients except the vegetables.

    Simmer until cheese melts.

    In 9 x 13-inch casserole, put vegetables on bottom; cover with chicken mixture. Bake at 350° to heat through, about 1/2 hour.
