- 1/2 c. chopped onion
- 1/2 c. butter
- 1/4 c. flour
- 2 c. milk
- 2 c. cooked chicken (2 lb.)
- 1 c. mushrooms (1 jar)
- 1/4 c. chopped pimento (1 jar)
- 2 hard-boiled eggs, sliced
- 1 1/2 tsp. salt
- 1 tsp. paprika
- 1/4 tsp. pepper
- 1 1/2 c. cooked rice
- 1 c. grated cheese
Directions

1Saute onions in 1/4 cup butter until transparent.

2Melt 1/4 cup and blend in flour; stir in milk.

3Stir over medium heat until thickened.

4Remove from heat and stir in all of the remaining ingredients, except rice and cheese.

5Spread rice in the bottom of a 2-quart casserole dish.

6Pour chicken mixture over rice and sprinkle with cheese.

7Bake at 350° for 30 minutes or until bubbly and browned.
