- 1 (2 1/2 lb.) ready-to-cook broiler, cut up or filets of chicken
- seasoned flour
- 3 Tbsp. butter or margarine
- 4 chopped scallions or small onions
- 1/4 lb. chopped mushrooms
- 1 tsp. sugar
- 1 tsp. salt
- 2 Tbsp. fresh, frozen or canned lemon juice
- 1 c. apple juice or 1 c. chicken broth
- 2 diced tomatoes
- 2 Tbsp. snipped parsley
- 2 Tbsp. snipped chives
Directions

1Coat chicken with seasoned flour.

2In hot butter or margarine in a large skillet, saute chicken until golden on all sides.

3Add scallions, mushrooms, sugar, salt, lemon juice, apple juice or chicken broth (according to taste preference) and tomatoes.

4Cook slowly, covered, for 45 minutes or until chicken is fork-tender. Sprinkle with parsley and chives.

5Makes 3 to 4 servings.
