  • 1/4 c. margarine
  • 8 chicken legs and thighs
  • 1/4 c. flour
  • 1 (16 oz.) can whole onions, drained
  • 1 (4 oz.) can chopped mushrooms, drained
  • 1 small can evaporated milk
  • 1 can cream of mushroom soup
  • 8 oz. grated sharp cheese
  • 1/8 tsp. pepper
  • 1/8 tsp. paprika

Directions

    Preheat oven to 425°.

    Melt margarine in 9 x 13-inch pan. Coat chicken with flour, place skin side down in margarine.

    Bake uncovered, 30 minutes.

    Turn and bake 15 to 20 minutes or until brown.

    Remove from oven, reduce heat to 325°.

    Add onions and mushrooms.

    In bowl, mix milk, soup, cheese and pepper.

    Pour on chicken.

    Cover with foil, bake 15 to 20 minutes.

    Serve on rice.
