- 1 chicken, cut up
- 3 cloves garlic
- 4 black peppercorns
- 2 whole cloves
- 1/2 tsp. cumin
- 1/4 onion
- 1/2 c. water
- 2 Tbsp. oil
- 2 onions, sliced
- 5 small tomatoes, sliced
- 3 to 4 chiles (chipottes)
- salt and pepper to taste
Directions

1Season chicken with salt and pepper.

2In a blender, puree garlic, peppercorns, cloves, cumin and 1/4 cup onion with 1/4 cup of water.

3Heat oil in large skillet.

4Add sliced onions.

5Cook 3 to 4 minutes.

6Add puree.

7Cook over medium heat.

8Heat 10 minutes. Add tomatoes; bring to a boil, then simmer 5 more minutes, covered. Puree chiles with remaining water; add to skillet.

9Boil 2 minutes. Collect seasonings.

10Add to chicken, cover and cook over low heat for 25 to 30 minutes until chicken is tender.
