- 2 Tbsp. melted fat
- 3/4 lb. chicken, diced
- 1 c. diced celery
- 1 c. diced onion
- 1 c. boiling water or chicken broth
- 1 can mushroom soup
- 1 Tbsp. cornstarch
- 1 tsp. salt
- 1/2 tsp. sugar
- 2 Tbsp. soy sauce
- 1/8 tsp. pepper
- 1/8 tsp. paprika
Directions

1Brown chicken in melted fat in a large frying pan, stirring constantly 5 or 6 minutes.

2Add celery and onion in water or broth.

3Cover and simmer 10 minutes.

4Add mushroom soup; cover and let simmer.

5Blend cornstarch with cold water to make a paste and stir into the cooking mixture.

6Continue to cook and stir 10 minutes.

7Add salt, sugar, soy sauce, pepper and paprika.

8Heat for 3 minutes.

9Serve over cooked rice.
