Chicken Chowder

Ingredients

  • 4 chicken breasts, skinned
  • 4 c. water
  • 1/2 tsp. salt
  • 2 medium potatoes, cubed
  • 2 medium carrots, chopped
  • 1 (17 oz.) can creamed corn
  • 1 (15 oz.) can tomato sauce with tomato bits
  • 1/4 tsp. pepper

Directions

    Combine chicken, water and salt in large boiler.

    Bring to boil and simmer until chicken is tender.

    Remove chicken from broth reserving 3 cups broth in boiler.

    Cut up chicken into bite size pieces and set aside.

    Add potatoes and carrots to broth. Bring to boil.

    Simmer 10 to 12 minutes.

    Add chicken, corn, tomato sauce and pepper and simmer 15 minutes or until vegetables are tender.

    Stir occasionally.

    Yields 2 quarts.
