  • 2 whole chicken breasts
  • 4 c. water
  • 1/2 tsp. salt
  • 2 to 3 medium potatoes, peeled and chopped
  • 2 to 3 medium carrots, coarsely chopped
  • 1 (17 oz.) can cream-style corn
  • 1 (15 oz.) can tomato sauce with peppers and onions
  • 1/4 tsp. pepper

Directions

    Combine the first 3 ingredients in a Dutch oven; bring to a boil.

    Cover, reduce heat and simmer until chicken is tender. Remove chicken from broth, reserving 3 cups in Dutch oven.

    Remove meat from bones and cut in pieces; set aside.

    Add potatoes and carrots to broth; bring to a boil.

    Cover, reduce heat and simmer for 10 minutes.

    Add chicken, corn, tomato sauce and pepper. Cover and simmer for 15 minutes, or until vegetables are tender, stirring occasionally.
