  • 2 Tablespoons Olive Oil
  • 1 whole Onion, Chopped
  • 1 whole Green Bell Pepper, Cored And Chopped
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoons Ground Coriander
  • 1/2 teaspoons Chili Powder
  • 1-1/4 pound Boneless Skinless Chicken Breasts Cut Into Bite Size Pieces
  • 3/4 teaspoons Salt
  • 1 can (14 Oz.) Low Sodium Chicken Broth
  • 1 can 14 Oz Stewed Tomatoes, Drained
  • 2-1/2 cups Frozen Corn, Thawed
  • 2 cans 14 Oz Cannellini Beans, Drained And Rinsed

Directions

    1. Heat oil in large pot over medium heat. Add onion and bell pepper. Cook, stirring, 5 minutes. Stir in cumin, coriander and chili powder; cook for 1 minute.

    2. Stir in chicken broth and tomatoes. Bring to a simmer. Add chicken. Cover and simmer over low heat for 10 minutes or until chicken is cooked through.

    3. Stir corn, beans and salt into the pot. Heat through. Spoon into bowls and top with shredded cheese.
