  • 4 1/2 c. zucchini, cut small
  • double pastry shell (10 inch)
  • 3 Tbsp. flour
  • 1 tsp. cinnamon
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1/4 tsp. nutmeg
  • 3 Tbsp. lemon juice
  • 3 Tbsp. butter

Directions

    Cover zucchini with boiling water, let stand 5 minutes, drain. Fill pie shell with mixture of zucchini and all other ingredients except butter.

    Dot with butter.

    Put on top crust.

    Bake at 450° for 15 minutes, then 350° for 50 minutes.
